This recipe is an old Land O Lakes one. In the 80s, they published quite a few cookbook digests at the grocery check-out counter. I modified it to be gluten-free.
Ingredients:
• 1 pkg. chicken legs
• 1 purple onion, chunked
• 2 cups GF noodles, uncooked
• 2 cloves garlic, minced
• 1/4 lb. fresh green beans
• 1 1/2 cups chicken broth
• 1 cup water
• 2 tsp. thyme
• Salt & pepper to taste
Directions:
Season chicken with salt and pepper. Brown chicken in a dutch oven or electric skillet with 2 tbsp. butter and the garlic. Add chicken broth, thyme, and green beans. Cover and simmer for 30 minutes.
Add onion; cover and simmer additional 10 minutes.
